Greek Power Salad with Shrimp
Protein-forward, mineral-rich and made for movement days. Feta, olives, cucumber and a lemon-oregano dressing.

Ingredients
- 250 g shrimp, cooked and peeled
- 4 cups mixed greens
- 1 cucumber, sliced
- ½ cup kalamata olives
- ½ cup cherry tomatoes, halved
- ¼ cup red onion, thinly sliced
- ¼ cup feta cheese, crumbled
- Vinaigrette: 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste

In a large bowl, start with a base of mixed greens. Add the sliced cucumber, halved cherry tomatoes, thinly sliced red onion, and kalamata olives.

Gently toss to combine.

Arrange the cooked shrimp on top followed by a sprinkle of crumbled feta cheese.

Use a small whisk or a fork to thoroughly combine the vinaigrette ingredients.

Lightly drizzle the dressing over the salad, starting with a small amount and adding more to your preference.
