Mediterranean Salmon with Roasted Vegetables
Omega-3s for brain and hormones. A one-tray meal that feels celebratory on a Wednesday.

Ingredients
- 2 salmon fillets
- 1 baby marrow, sliced
- 1 bell pepper (any colour), sliced
- ½ cup cherry tomatoes
- 1 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
- Lemon wedges and fresh parsley for garnish
Method

Preheat oven to 200°C.
- 2
Toss baby marrow, bell pepper, and tomatoes with olive oil, oregano, salt, and pepper. Spread on a baking pan.

Place salmon fillets on the baking pan with vegetables. Drizzle with a bit of extra olive oil.

Roast for 15–20 minutes, or until salmon is cooked through and vegetables are tender.

Garnish with lemon wedges and fresh parsley before serving.
