Protein Pancakes with Berries
Slow-releasing carbs and complete protein — a Whimsy Eater weekend ritual that keeps energy steady.

Ingredients
- 1½ cups gluten-free flour or whole wheat flour
- 1 scoop vanilla protein powder (whey or plant based)
- 1 tsp baking powder
- ¼ tsp salt
- Optional: pinch of cinnamon
- ½ cup milk of choice (almond, coconut, etc.)
- 1 egg
- ½ tsp vanilla extract
- ½ cup mixed berries (blueberries, raspberries, etc.)
- Butter for the pan
- Optional toppings: maple syrup, nut butter
Method

In a medium bowl, whisk together dry ingredients, milk, egg, and vanilla extract until batter is smooth.

Heat a large nonstick skillet or pan over medium heat. Lightly coat with butter.

Pour about ¼ cup of batter per pancake onto the hot skillet. Cook for 2–3 minutes per side, or until golden brown and cooked through.

Serve pancakes warm with fresh berries. Drizzle with maple syrup or nut butter if desired.
